I just realized that we have a bit of age definition for Applejack, at least.

She was a very young foal at the last reunion, which was 100 moons prior to this episode. So at this time, Applejack is a little over 100 moons old. Assuming a "moon"refers to one cycle of the moon, and that the lunar cycle mirrors ours, she is therefore a little over 100 months old, or about 9 years old.

From Wikipedia, "Horses four years old are considered mature, although the skeleton normally continues to develop until the age of six".
So If we take 4 years Equestrian to be equivalent to 18 years human, Applejack is similar to a ~41 year old human.
If we take 6 years Equestrian to be equivalent to 18 years human, she corresponds to a ~24 year old human, which is a lot more reasonable, but still a little old.

It could be two reunions back, thus 200 moons, putting her at around 18 years old, which would bear a good 1:1 Equestrian:human age of maturity

besides because of the cartoon ponies nature of the show, calender age (to me) is useless (unless in comparison to OTher cartoon ponies) we can see their "age" by their interactions and their environment
